Food Safety Training

The current hygiene regulations require that all food handlers working in a food business are supervised and/or trained in food hygiene relevant to their work.

As a guide, all food handlers who prepare open, high risk foods should have formal training. This takes the form of food hygiene courses which are available at Levels 1,2, 3 and 4.

Level 1 - is aimed at those new to the workplace who require a simple overview of food hygiene before starting work or as part of an induction programme.

Level 2 - (formerly basic/foundation) is the minimum requirement for those who prepare and handle open food (eg. chefs, cooks, kitchen assistants, home caterers or mobile catering businesses)

Level 3 - (formerly intermediate) is aimed at business owners and managers or supervisors of small and medium sized catering operations.

Level 4 -(formerly advanced) is aimed at managers of larger catering premises or where complex food handling operations are carried on.

Level 2 Training

This is this the most popular course and is of six hours duration and covers such topics as food poisoning, micro organisms, preventing cross contamination and pest control. An assessment is carried out at the end of the session which consists of a multiple choice or verbal test.

In larger organisations, in house training may be used and so long as it is to an appropriate standard, it will satisfy the legal requirement. it is good practice for a business to keep records of training completed by every member of staff.

The following organisations offer accredited food hygiene training courses;

The Chartered Institute of Environmental Health can provide details of accredited training courses in various languages and offers a course finder facility which provides details on all the levels of food hygiene training.

The Food Safety Training Providers web site contains a searchable database of trainers throughout the UK, sorted by county. The information includes contact and training course details.
